I'm thinking of getting a couple of sheep to graze in the field alongside my horses, as I've been told they will eat off the poorer grazing and allow the better grass to come through.
Are there any things I should consider?
I think I would get some lambs to rear on for meat, so are there any breeds I should consider. I cannot have anything with horns obviously.

Hello, and welcome to the forums Liz!
Liz,
  I would HIGHLY reccomend Hair Sheep. Google them if you like. We raise them, and they are so low maintenance. You don't have to sheer them, they have really rot\desease resistant hooves, they don't have horns, they grow a coat of winter wool in the winter, and shed it off in the summer, making real nice nesting for the birds , they are absolutely GREAT for meat, and their meat is not as tough as normal mutton, and there are so many things about them that are just great. If you can't find much on google, and\or want to know more about them, please PM (private message) me for my email.  
  Where do you live? Some sheep breeds will eat off the more poor grass, and some will eat off the better. That one depends on the specific sheep.
   What type of fencing do you have for your horses? If you have the type with only boards or barbed wire, you are going to have to get some sheep fencing (they call the stuff different things in different places).
